In Madrid, the country's best croquette has been chosen: the ham croquette from the Salino restaurant. It won the XII Campeonato Madrid Fusión 2026, impressing the jury with the balance between its creamy texture and classic flavour. The filling is made with 100% acorn-fed Iberian ham and a delicate béchamel sauce, while the fine panko coating gives it a light crunch without altering the flavour.

Chef Alejandro Cano, who represented the restaurant, said that the recipe requires a great deal of work and that the croquette reflects Salino's culinary philosophy: traditions reworked with mastery and attention to the product. The restaurant has been open since 2018 and is part of the gastronomic project of the Aparicio brothers, owners of Grupo Cachivache, known in Madrid for their high-quality restaurants.
