Madrid expands its list of Michelin restaurants with three new addresses
Michelin has turned its attention to the outskirts of Madrid, highlighting three new restaurants that are changing the capital's gastronomic map.
The Michelin Guide 2026 features three additions in Madrid: Éter in Legazpi, Emi in Gaztambide and Ancestral in Pozuelo have taken haute cuisine beyond the usual gastronomic neighbourhoods.
Éter has attracted attention for its intimate atmosphere and creative offering. Emi opts for direct communication between the chef and diners at the bar. Ancestral shows that the most interesting projects are moving ever further away from the M-30.
At the ceremony held in Málaga, there was not only room for the new arrivals. Ramón Freixa Atelier, the renowned chef's latest project in the Salamanca neighbourhood, regained the two stars it had lost, reinforcing Madrid's position on the gastronomic map.
