The winners of the ‘Corona de la Almudena 2025’ competition have been announced
The first prize in the ‘Corona de la Almudena 2025’ competition has gone to three pastry shops, each of which has reinterpreted the classic Madrid dessert in its own way.
In Madrid, the winners were officially announced: Mifer, El Riojano and Formentor took first place.
Each pastry shop presented its own vision of the emblematic Madrid dessert. Formentor surprised with a modern style: the dough had a subtle citrus touch that brought freshness, while the cream filling with natural vanilla offered smoothness and a delicate aroma. El Riojano remained faithful to tradition; its slowly fermented dough, combined with delicately whipped cream, was completed with perfectly formed peaks of cream, evoking the city’s classic flavours. Mifer, for its part, achieved a balance between technique and traditional recipe: creamy truffle was blended with toasted almonds, creating a light, airy texture that melted on the palate and offered an intense, refined experience.
