“Rock & Callos” wins Madrid tapas championship
Madrid now has a new benchmark tapa. “Rock & Callos”, created by chef Carlos Domínguez Berbel at the Lavagú restaurant, has won the 5th Community of Madrid Tapas and Pinchos Championship.

The dish offers a light and creative reinterpretation of callos a la madrileña. It starts from a traditional base with chickpeas, chorizo, and morcilla, but is presented as a fritter, served with a sauce made with cocoa, citrus, and nuts.
The jury praised the originality and balance of the dish, highlighting its ability to modernise a classic recipe without losing its identity. The recipe beat other finalists with well-established proposals in the local gastronomic scene.
The prize includes a cash award and qualification to represent Madrid in the national championship at Madrid Fusión. The restaurant is already working on adapting the tapa to meet increased demand.
The recognition positions Lavagú as one of the new gastronomic hotspots in the city, especially for those seeking different options for tapas.
